Facing same problem after AA latest update..
I confirm it happens to me as well, but rollbacking Android Auto doesn't seem to fix it. Any clues?
Hello, me too. I tried to rollback android auto but doesn't fix too. I finally succeed by downgrade Google play services. they probably introduce some anti third party patched apps in the last update of google play services. I downgrade Android auto to 5.1.500644-release (feb 25 2020) and google play services to 20.04.75 and block auto updates in play store ...

Tried to downgrade aa and google play services (gps) to several versions (including suggested by hugodigio) but aa request last version of gps. Tried with old smartphones to check if old versions of aa and gps worked but always requesting newest gps version... Of course with last aa and gps installed, rooted and following instructions, aa works and asstream shows the screen but touch is not responsible.
For me, the recommended rollback worked.
Meanwhile, with the exact same versions installed as above, Android Auto version 5.1.500644 stopped working. When started, it requires to be updated. I re-installed both AA 5.1.500643 and GP 20.04.75 while denying the device internet connectivity, but the problem remains. I considered that AA could have a timebomb and changed the device date back to September, but no success. Google play store was deactivated all the time.
While I was trying to install a newer AA version in an attempt just to reset the 'update required' flag wherever it is hidden, I found (after some fiddling/rebooting with AA itself being recognised by the car) that AA 5.9 lists AAStream as allowed application again, and transports my OsmAnd incl touch. Thus I have this combination currently running, the G-apps grabbed from apkmirror.com:
