I don't want to exclude all Variables from the Recorder, but as a future enhancement could look into an option to exclude per entity. If you think this would be helpful/the right solution, free free to open a separate Issue so it can be tracked.
Still looking into the possibility of a hybrid integration that supports yaml and config_flow. Will update when I have more.
