Make stemmed a setting per field in documentType

[x] Remove fallback to english if no language set anywhere
[x] Only add language to indexConfig if stemmed is enabled for field in documentType
[x] In GUI disable the setting when type is not string
[x] In code set stemmed to false when type is not string

Perhaps be smart when building query? That would be across documentTypes, so trust the indexing.
