Bump version for continued development on main branch #412

This PR bumps the version (specifically the major version). Development is now happening towards a version 6.1.0 as we are releasing version 6.0.0. Version 6.0.0 will be released from the tip of the main branch at the moment i.e. https://github.com/enthought/envisage/commit/205b680c6ea165a445581187222394fd8dcb7581.
