Update Envisage documentation for the 6.1.0 release #482

This PR adds top-level docs for the Envisage 6.1.0 release.

Note that docs were never built for the 6.0.0 release: the existing contents of the top-level gh-pages directory match what's in the existing 5.0 folder, so we simply delete those contents and replace with the 6.1.0 documentation.

Yes, I'll move existing docs into a new 6.1 subfolder when the next feature release of Envisage happens.
