This PR updates the docs for Envisage 7.0

Move existing top-level docs into a new 6.1 subdirectory
Unpack the new docs for 7.0 (built via the documentation test workflow) into the top level.

I've tested manually, and all seems to be working as expected.

Closing. I'll regenerate for the 7.0.1 release. (The only visible difference will be in the changelog.)
