Continues the work done by @liranfarage89 in https://github.com/env0/k8s-modules/pull/32

Breaking changes:

there isn't upgrade path from previous version of this module
only full blown installation is supported

Feature Request

Be able to install the eks cluster with latest version
use as uptodate versions of the modules and providers as possible

update providers and modules
some adjustments

@away168 FYI - as stated in the description there isn't upgrade path from previous version of this module, so I want to tag the master as v0.4.0 and after merging this it will be v1.0.0
