Expanded content of README.md in hopes to give more clarity. This will also (hopefully) entice developers to contribute with the library with what they can improve just by reading the landing documentation of this repo.

[x] - Added directory docs/assets to segregate images that will be used for documentation; added this to highlight the plot being created from the get_case_plot function
