Add configuration to EEPROM #1

Add configuration in EEPROM which system applies at power up.

Configuration can be modified throught UART commands or buttons/screen 
interface.

Configuration example: data logging or not (what to log), screen enabled or 
not, screen brightness, power saving mode enabled/disabled, etc.
