Create directory structure on docs repo for tentative sidebar based on https://github.com/eosnetworkfoundation/devrel/issues/83.

AC:

directory structured created and merged into a feature branch (not on main for now)

Child of #83

Performed initial renaming of existing folders in new branch feature-sidebar#157.
The new folder names will break image generation on docsgen build due to some folder dependencies hardcoded in some scripts. Ticket https://github.com/eosnetworkfoundation/docsgen/issues/84 has been created to address this.
