Going through EOS onboarding to identify content

We must review the internal EOS onboarding document to identify which pieces can be turned into educational onboarding video content.

These topics should be non/semi technical, and should not require development knowledge but are required to onboard to the ecosystem as a developer.

AC:

• Identify topics that would make good video content
• Output a list of potential tickets
