fix: Use ESP IDF version 5.1.1 #26

Tested all three methods of flashing the T-Display. Everything's working fine.

Users who are troubleshooting issues might need to run: sudo rm -rf {/root/jade,/root/esp/,/root/.espressif/,/home/user1/jade-diy/}
