Migrate test repo to copier template

The only "tricks" have been:

• Delete the .git directory that copier creates for the template repo instance
• Deleting epics opis and epics pvcs services to simplify the tests
• Change example service config schema to # yaml-language-server: $schema=https://github.com/epics-containers/ioc-adsimdetector/releases/download/2024.2.1/ibek.ioc.schema.json in order to get the validate tests working

To clean up the test data a bit I removed the unused IBEK config and changed all mentions of bl45p to bl01t

I'll resolve the conflicts and merge this (and my chart.yaml) once i have finished updating the rest of the framework later this week.
