mount point name opi/ioc is confusing

• Change the mount point to opi/auto-generated.
• Also change the folder opi/iocs to opi/auto-generated in services-template-compose
• update the documentation to reflect both of the above
• update these projects with the new templates (before the workshop)

@marcelldls I've been thinking about your comment re this and think it's worth getting done sometime in the next couple of weeks as it is confusing and will be an invasive change once people start making new ioc-xxx projects. (thanks for your comprehensive review!!)
