Create vignette for deprecated plotting functionality #661

A few plotting functions were dropped in the most recent scoringutils update. The code should be moved to a vignette so that users can find it. This currently comprises

plot_interval_ranges()
plot_predictions()

Are we happy to push this to scoringutils version 2.1? Or do we think this needs to happen before the next CRAN release? On the one hand, it would be nice to have something to replace the current function code that we will be deleting. On the other hand, creating a full Vignette is a big task.

I think we need something even if very rough for 2.0.0. Maybe split this into two issues and do okay and a do well
