update and document all packages to latest version

use the latest version of all packages, re-test & provide versions in environment .yaml files

• [x] install & test the latest GSEApy, especially the Odds-Ratio calculation
• [x] rGREAT Bioconductor latest version changed a lot (offline usage enabled)
  • [x] install rGREAT from Bioconda and test if required functionality is there
  • [x] implement new script with local great(), replacing the previous version
  • [x] test with the test data
