Install Rancher Desktop
Attempt to install Epinio extension

Environment

- Architecture:
- Epinio Version: 1.11
- Cluster:
  - Provider: k3s
  - Options:
  - Kubernetes Version: 1.29

It appears that the expected ghcr.io/rancher-sandbox/epinio-desktop-extension:0.0.23.5 is not available, but also could be out of date (0.0.28) looks like the most recent.
