Fail on R-CMD-CHECK building `epidist.Rmd` #120

R-CMD-check / macOS-latest (release) seems to fail on building epidist.Rmd in ways unrelated to code changes.

I think @seabbs suggested that this was an cmdstanr install problem.

  1. Is that the case?
  2. What can we do to fix it so that we can use this check as intended?

@seabbs do you have ideas about how to fix this / if it's possible? I think this is bottlenecking use of the checks somewhat with the vignettes failing.
