Update {epiparameter} usage #156

This PR fixes the use of {epiparameter} functions and classes within the {simulist} package. In epiverse-trace/epiparameter#360 there were breaking changes to the {epiparameter} package. Function calls and checking for S3 classes have now been updated in this PR.
