homogenize the use of pipe to `%>%` instead of `|>`

in coordination with TRACE-LAC team @GeraldineGomez @lgbermeo, we found it beneficial and less time-consuming to keep the usage of the magrittr pipe %>%

arguments:

• wide usage of tidyverse and dplyr in epikit (similar to these tutorials)
• the magrittr pipe %>% will not disappear or be deprecated.
• the native pipe |> is more beneficial for packages for them to showcase their code using a lesser amount of dependencies.
