Update README example and Demo app #17

I updated the README so that the example works (and noted that it is Swagger 2.0). Updated the demo app as well so that the resulting spec passes validation in https://editor.swagger.io/.

Fixes #16

I'm going to be reworking this branch so I'll close this PR and then open a new one when I'm done.
