I just discovered this awesome project and am going to have some boards made by OSH to mess with for one of or local security meetups. If anyone is interested, reply here.

Glad you're interested! You may find the components a bit expensive, but you can use the entire software stack without the board itself. Just get two USB-Ethernet adapters and put yourself in the middle of a network link.

For the BOM it appears the following have changed:

CL10B104KB8SFNC is now CC0603KRX7R9BB104 CDBA120-G is now CDBA140-G

I'll update the BOM in here and issue a pull for you once I validate them off a DigiKey order.

The only real costly part are the relays, is there any other possible option for those at a lower cost?

But, FWIW, the total BOM cost is $197.06 (plus shipping).

Do you have a way for people to purchase this specific setup? I’d love to support your work but the info above is awesome for a DIY anyway.
