Dataset updates #54

This PR should clean up (most of) the references to the previous datasets (e.g. in the setup and main page of the lesson). I have moved the acknowledgement to NEON for funding from the data section in the index page to the README of the repository.

I have also updated the instructions on how to download the new vector data files in the setup instructions.

Address only part of #14, links/description within each episode should still be implemented.

Thx @fnattino ! I think for now it's all good. Indeed we still need to update the data description per episode.

I have updated issue #14 and broke down the task to three points. Maybe you can also review it to see if you agree?
