chore: Update blog post frontmatter part 1 - layouts and authors

This PR completes items 1 and 2 of #894.

I hope to go through and do more of the manual tasks. This completes what was doable with a script.

Ensure that every post specifies layout: post
Ensure that all authors are specified as arrays
As a side effect of converting to JSON and back to YAML, ensure that all front matter is consistently formatted
