more waveshare epaper display models support #2636

Describe the problem you have/What new integration you would like please add additional waveshare epaper models where possible. For my case the 4.2inch v2 epaper board (https://www.waveshare.com/product/displays/e-paper/epaper-2/4.2inch-e-paper.htm).

Please describe your use case for this integration and alternatives you've tried: when I use the esphome integrated model "2.9inv2" (against above mentioned 4.2v2 display) it displays a small part on the panel. other integrated models did not show content on the display (https://esphome.io/components/display/waveshare_epaper.html?highlight=waveshare)

Additional context The demo arduino code by waveshare does have code integrated for almost all models. (https://www.waveshare.com/wiki/4.2inch_e-Paper_Module_Manual#Resources). In theory it must be easy to integrate I think, but do not understand enough of coding to do it myself.

Same for the 3.52inch Epaper Display

I’d love to see the 5.83 and the 3.7 inch models supported
