[x] Fix problem with Eigen version (system version on 20.04, 3.37, is completely broken in CUDA so we need 3.40+)
[x] Get occupancy and ESDF visualization to work (was failing due to Eigen problems)
[x] Ship a panoptic mapping example bag + gif
[x] Update docs.
