BTW, freeze doesn't seem to work at all for Quarto. (Not just in this PR; in the pkg generally)

In #201, I simplified the cleanup of the final docs folder too much because the files couldn't be found anymore. I undid that.

I want to see how this behaves in the polars PR so merging now
