JSON endpoint lists empty ids #259

Our https://collections.eurodatacube.com/stac/index.json endpoint generates for some collections empty IDs. We should either remove them from the endpoint or make sure they are generated correctly (with full metadata).

Please update those 3 so the become openEO collections (adding the openEOPID and other metadata that might be useful like the summaries)

co_3daily_data
s5p-ch4_weekly
so2_daily_data

This one is zarr which we currently don't support in the platform and should therefore be updated in a way it doesn't show up at the index endpoint anymore. While add it, please also change the Type from byoc-a216afca-8a65-4072-87a5-8ed7aa21e08a to zarr-a216afca-8a65-4072-87a5-8ed7aa21e08a as that's the correct one.

@Dorothyrono can you please check the end date for the temporal extent of the S5P CH4 weekly collection, so we can make sure that this collection is still regularly updated?

It is indeed updated regularly, i see the end date is 2022-11-28

Sorry about that, i might have missed that before, it is also possible that it changed in the meantime

we need to update that
