We organized (successfully) a European event and we have to give back to the European roots of the conference, on behalf of all the people who attended, one way or another. That is by either funding software or trying to make an impact in the socioeconomic issues in Europe.
The major issues in Europe, as I see them, right now are:
To this end I compiled a list of charities and organization which help, one way or another, with the above issues (unemployment through education, privacy issues and digital rights through the EFF and the FSF, environment through Greenpeace and WWF). Or we can fund well known Ruby projects like RVM.
If you have a STRONG suggestion to make, for a European charity (or an International one with a European chapter) that I missed, then please do so. Otherwise choose one of the above. Same as with the Greek charities all of them support a good cause, it's hard NOT to align with one of them. Please vote ASAP.
@fotos thanks for bringing up these ideas. I had totally forgotten EFF and FSF. Now I have more options than votes! :P

I think that regardless of which one we decide we should ask them (without making it a conditional offer) to involve Greece in one of their future actions.

I'll see to it but obviously there are no guarantees. I have already written two cover letters for the donation (one in Greek, one in English) and I've already included a (strong) hint about making a future event / happening in Greece (or a contribution that helps Greece somehow).
