Regularise init.ps1 and .env.template #6

  1. init.ps1 - removed $ sign in case of TELERIK_ENCRYPTION_KEY and other vars
  2. init.ps1 - .env file generation using .env.template based on other repos like xm cloud
  3. Regularized .env.template to have same fields across topologies image
