MAINT: update changelog via github-activity #102

@mmcky are you OK with this change in CHANGELOG style? It would be good if all of our projects used the same release workflow. If we migrate to github-activity across all projects, it will be easier to introduce some kind of action that let's us automate more of the release (e.g. like jupyter-releaser).

I think the general plan for EB repos (of my own devising, I should add) is to move to low-maintenance standardised tools. For us, that means GitHub activity.
