fix: Upgrade MongoDB and MongoDB driver - EXO-64442 #615

Upgrade MongoDB drive to the latest version 4.9.1
Update all services to use the new API
Upgrade de.flapdoodle.embed.mongo to the latest version 4.6.3
Update Unit tests with the new embedded server version
Cleanup code and remove unneeded functions
