Updates example app to use latest moti version on install. This avoids needing to increment every time. It's fair to expect it to be compatible with the latest Expo / Reanimated version.

This is safe since the starter doesn't have a lockfile on creation. Once you run yarn or npm i once, it'll lock the version in the lockfile.
