chore: enable metrics using prometheus-flask-exporter

• [x] Make use of ubi8 python36 image
• [x] Add metrics to track apiv2 endpoints
• [x] Metrics will be served directly from guicorn process in a different port(8000 by defaul)
• [x] Add "metrics: enabled" to Service to make it discoverable by ServiceMonitor
• [x] Remove unwanted endpoints from apiv2(livness, readiness, system_version..)
• [x] Remove CA V2 GET tests(deprecated usage)
