Upgrade Faraday to v2.6.0

Description

This updates the dependency on Faraday from v1 to the latest v2.6.0. The following additional updates were made to support this:

• The required ruby is bumped to 2.7. Faraday 2 requires Ruby >= 2.6, but Ruby 2.6 has been EOL since 2022-04-05.
• bundle install updated several of the dependencies in Gemfile.lock
• A dependency on faraday-multipart was added since most bundled middlewares were moved out of the Faraday gem into their own gems
• A .rspec file which requires spec_helper.rb automatically was added so that the specs will actually run when bundle exec rspec spec is run
