Update to use Linkedin API v2 & various fixes

This PR adds a few fixes :

removes warnings in mix.exs,
updates oauth2 dependency to latest version,
updates strategy OAuth2.Client call to use the JSON parsing library configured in Ueberauth,
changes default scope to r_liteprofile because that's the default in Linkedin now,
changes to correctly retrieve email, firstName, lastName and image in auth info.
