Do you mean gender or sex?

Sex refers to biology of a person and means configuration of chromosomes and reproductive organs while gender means personal sense of who you are (e.g. man, woman, transgender)

If you mean biologic sex you would have:

• Female
• Intersex

If you mean gender you would need to go with the full spectrum as facebook had to do when they implemented full support of genders. These include, but aren't limited to:
