What this PR does / why we need it:

Since I've lately been helping in restoring and cleaning up the falcosecurity/evolution repo, I'd like to propose myself as a maintainer in order to help in the review and approval of new contributions. Moreover, with respect to our new governance, maintaining "Special" repositories such as falcosecurity/evolution is also part of core maintainers' duties (see: https://github.com/falcosecurity/evolution/blob/master/REPOSITORIES.md#core-maintainers-duties-and-privileges).
