new(driverkit): added configs for 7.2.1+driver. #1596

Also, removed config for now unsupported 6.0.1+driver.

New driver release will be used by upcoming Falco 0.38.2 patch release; see https://github.com/falcosecurity/libs/releases/tag/7.2.1%2Bdriver
