Looking at a dump of the disc with xbfuse, it contains a file called NinjaTrilogy.xbe which should contain the ROM. Looking through the file with binwalk or manually did not yield a clearly visible uncompressed ROM.
It should be possible find more information by parsing the file with the Ghidra-xbe extension.
