You probably already knows this, but just in case.

Using the same method as you described with the Genesis/Mega Drive Mini you can use Hakchi to extract ROMs from the consoles.

With the SNES Mini you also have to convert the ROMs from .sfrom to .sfc, and fix the audio. I think there are different ways of doing it, but I just used the wiiu-vc-extractor https://github.com/wheatevo/wiiu-vc-extractor/blob/master/README.md
