Sorry, fun idea but extremely hard to pull off. Speech recog is very hard, and
while there are a few open source
project I might be able to requisition, they require speech models to work
which are not free and must be
licensed.
So unless Apple pays for it and builds nice speech recognition libraries into
the phone's OS, this isn't going to
happen.

Thats unfortunately. I had hoped that Apple had released a speech recognition
API
with the release of the 3GS which has speech recognition built in.
