Update workflows to v4
Update dependencies
Update readme version compatibility

Fixes #111

Two changes need to be made before merging.

[x] Update target branch to next
[x] Update workflows to use v4 instead of git sha

I think that this piece of the readme needs to be updated, but I'm not entirely sure what to put. Maybe the same as the last line and just bump the @fastify/ajv-compiler version?

Yes, that is the correct change.

I only got 3 high severity vulnerabilities, not sure of much impact this has in terms of severity on ajv-compiler.
