This PR brings the CI for this repo into line with the reusable workflows.

Snyk badge has been removed as the dependency-review job does the same thing as Snyk, see https://github.com/fastify/fastify/issues/3883
Coveralls badge and workflows have been removed as main workflows no longer use it, see https://github.com/fastify/fastify/issues/3720

Forgot to say. This would be a breaking change as it drops support for node 10 and 12 in the CI, and adds support for node 18
