1 month ago buenas, proba esto!: https://forums.docker.com/t/error-response-from-daemon-failed-to-create-shim-oci-runtime-create-failed-runc-create-failed-unable-to-start-container-process-error-during-container-init/127147 y cualquier cosa comentame, este chico tenia un error parecido y tenia ubuntu tambien
al tratar de instalar en docker-compose up -d (con sudo porque no me dejó hacerlo como usuario normal) luego de unos momentos llega a este error:
