Update spin-test manifest workdir/dir as soon as spin-test implements the change #1277

When resolved, the following Issue will change the way spin-test is configured. https://github.com/fermyon/spin-test/issues/58

As a result of the above change, the testing-applications.md page will need to be updated to reflect the rename of dir to workdir.
