What changes are being implemented in this Pull Request?

Trying to change style to match ITN style

What was your approach?

copied the _output.yml and index.Rmd files from style-sets/itcr/
copied the files from style-sets/itcr/copy-to-assets/ to assets.

What GitHub issue does your pull request address?

Automatic issue #2

Yeah, this repo needs an update. There's no download of the course available for the repo @carriewright11

@carriewright11 thanks to Candace, we sent this repo a sync which I merged to main and which I then merged to this branch, I can verify that the style updated successfully with the downloadable render preview
