Once the ASU dataset is hosted on Source Cooperative (#2), make this dataset an exemplar fiboa dataset for public example.

[ ] Potentially create fiboa-cli converter
[ ] Potentially create missing extensions
[ ] Validate data
[ ] Publish to Source Coop with great readme explaining what it’s about and how to use it
- [x] add PMTiles
- [ ] add STAC Collection
- [ ] potentially add GeoJSON examples

We've made quite a bit of progress on this. Tagging @hannah-rae @aninda-ghosh @eddiechoi00 so they are aware of this issue.
