Solution: Creating a new custom object, Teams, which is a Master-detail to contact. Basic object with a pick list of the Team values. Display only for volunteer contacts.
The only drawback is if there are more details around the team this wouldn't work but I think it would be a good start.

As a director of HART I want to know and understand what people are part of which teams.
When I run a report I can see the grouping of the teams and which people are part of those teams.
When I view a volunteer's record I can see all the teams they're part of.
