[TB] We need to update the video in mkdocs #833

Problem/Concern

@lwnoble suggested that the video that we have in our documentation is out of date and that she has a new one available.

Proposed Solution

I will work with Lise by updating the mkdocs files with the new video.

Hi @aaronreed708 - can I add the videos from conference talks to the mkdocs files as well? Is there a place where I should make those changes if you agree?

On the project call today, I shared that we can also work wtih Win Morgan at the Linux Foundation to have videos posted to the FINOS resources site and tagged for our project: https://resources.finos.org/category/projects-sigs/a11y-theme-builder?projects-sigs=a11y-theme-builder&c=cG9zdDo5OTE2NTU%3D

For example, the Video and PDF of the slides from the FINOS/Discover GAAD Celebration are posted there - we could decide to centralize videos and other resources on the FINOS Resources site, and tag them to our project. Win is on the FINOS Slack and has been pretty easy to work with; the resources site includes blogs, videos, PDFs, and links to the ThemeBuilder FINOS Sandbox.

If we choose to centralize all the blogs, videos, PDFs on https://resources.finos.org/, we can just update our own docs in the repo and in the mkdocs to add a heading for Resources and link out to that location (filtered on our project), which links back to the mkdocs.
